Annual India Trip

We are on our annual India Trip and this year I’m spending most of my trip in the kitchen. Mummy-ji and I are side by side almost everyday while she teaches me each and every step of some of her favorite recipes.  Hubby’s made it known which dishes are top priority to learn from her while I’m here.  I thought it would be fun to include some detailed videos of our readers’ favorite recipes, featuring the cook who makes them best. So check back soon and keep your computers and kitchens ready for a series of how-to videos.

Here is a preview of the recipes and videos to come.   Stay tuned as more and more videos will be making their way to the blog faster than you can say “how do you make navratan korma?

    Are there any requests for certain videos and recipes? Let me know here or on the blog and Mummy-ji and I will get them out to you.

    FYI – We can only do vegetarian recipes at this time.

    Looking forward to a nice korma recipe. I’ve had it with lamb, but would love a version that works with tofu, fish or veggies.

      I would love that too! However, Mummy-ji doesn’t make any Korma dishes. I’ve asked about Navratan Korma, a veggie dish. Navratan translates as “Nine Gems”. Mummy-ji says “One gem is enough”.

      …I will keep Navratan Korma in mind for future videos back home…

        Hi Colleen, I am so excited to see the videos ur planning to do with Mummyji. I am not surprised that Mummji is not familiar with Korma dishes since they are not essentially Punjabi. They are a a part of Muglai cuisine that was cooked in the palaces for kings (hence the fancy names and loads of cream and dry fruits) and eventually was clubbed into North Indian cuisine. So one could get Muglai dishes in most Indian restaurants but they may not necessarily be prepared at home.

          Hi Priti – I’m hoping to get the first one up within the week. I think the videos will be meant to accompany the recipes, rather than being full instruction, which makes them too large to upload.

          Yes, my Mummy-ji does Punjabi homecooking. The other day I made what I thought was kheer, but she informed me it was not kheer but “doodh pak”, I guess the Gujarati version of kheer but uses less rice and more milk and takes longer. It was well worth it, she ate three bowls of it!

    ohhh YUM!! anything with potatoes (aloo)! I had a stuffed potato thing once but i don’t know what it’s called.. it was a whole potato and somehow the insides are scooped out, mashed with paneer and onions and chilies i think..then fried or baked in some kind of sauce? sound familiar? then there’s a potato cauliflower curry thing… dangit i wish i could remember the official names!

      …see if you can find out the name of that fried stuffed potato dish. I asked the family and no one seems to know what it is.

        From Lupe’s description above I can guess the names of both the preparations. The first one is either stuffed dum aloo or could be a potato-paneer kofta curry. This is a restaurant style curry and not a usual homely preparation, just like the Navratan Korma. The second preparation is the Punjabi Aloo-Gobhi which I am sure Mummyji would be glad to teach us. :)

        Yes! Makhani daal is Hubby’s favorite.

        Okay the video request list so far is:

        Chapatis
        Chai
        dishes with potatoes
        cauliflower and potatoes (aloo gobi)
        Daal Makhani
        Chole
        Palak Paneer
        and a Paneer dish

        I think we have our work cut out for us!!

      We just so happen to have had Chole-Bhature for breakfast today :D But it was not homemade. Chole-Bhature has been added to the list.

    Today we recorded Aloo Gobi (cauliflower and potato curry). Hubby and I had it for lunch and it was amazing!
